It’s back-to-school time, and whether you have children going back to school or not, this is typically a busy transitional time. When things get hectic, it’s always helpful to have a recipe for a quick and delicious meal.
Our Residential Treatment Program Food Services Coordinator, Daniel, loves creating nutritious and comforting meals for the families he serves. One of his meals that is easy to make at home is pasta with Alfredo Sauce. The sauce recipe below is the perfect amount for 1 pound of pasta (Daniel recommends penne or fettuccine, but any pasta will do). This sauce is great on its own, but it’s also very versatile – add bacon and peas, roasted veggies, or chicken!
Alfredo Sauce
Ingredients:
2 ½ tbsp (35 g) Butter
¼ cup (35 g) Flour
18 ¼ oz (500 ml) Whole Milk
1 tbsp Minced Garlic
Dried Basil
8 oz Grated Parmesan Cheese
Directions:
- Melt butter in sauce pot over low-medium heat, make sure not to brown the butter.
- Add garlic, cook for about 30 seconds. Make sure not to brown garlic.
- Add flour, whisk frequently.
- When the mixture starts to turn slightly golden add about 1/4 of the milk. Whisk constantly until well blended.
- Add the next quarter of milk and whisk until blended. Repeat until all the milk is incorporated.
- Whisking frequently, bring the milk up to just under a simmer.
- Add ¼ of the grated parmesan, whisk until incorporated. Repeat until all cheese is blended in.
- Add salt, pepper, and dried basil to taste.
- Add more milk if sauce is too thick.
Serve over 1lb of cooked pasta. This meal is delicious on its own, but you can also add bacon and peas, roasted veggies, or chicken. Enjoy!
